Calamari Pasta

  1. Bring a large pot of salted water to a boil. Add pasta and cook until just tender, about 14 minutes, stirring occasionally. Drain pasta.
  2. Meanwhile, heat oil in a large skillet over medium-high heat.
  3. Add garlic, crushed red pepper and tomatoes. Cook 2 minutes, stirring occasionally, until fragrant.
  4. Add calamari and cook for 1 to 3 minutes until opaque.
  5. Stir in lemon juice and simmer rapidly until sauce is reduced and slightly thickened, about 2 minutes.
  6. Stir in parsley. Add drained pasta to skillet.
  7. Toss until heated through, about 2 minutes. Sprinkle with Parmesan and garnish with additional parsley. Season with salt and pepper. Serve immediately.
